I have dyed my hair blonde (permanent) but I don't know what will happen if I just let it grow out, since people have told me my natural hair colour had been stripped from the dying - what will my hair colour be then?

A permanent color has the ability to pull the natural pigment out of your hair! If your natural hair color is darker than the color your place in it! It will lighten it!
Your Hair will continue to grow, but the hair that has been lighten to blond will remain that way, the pigment that you had in it before is gone! If you want to return to your natural hair color, you can either let it grow out, or (depending on your hair color) you can have that pigment replace by artificial pigment, a (semi) or Permanent hair color.

Ur hair colour will grow back, as soon as your roots show.
You don't really 'strip' your colour from your hair unless u bleach it, not dye it - dying just coverers it up.

Well I've died my hair blonde ever since I was in high school. I am a natural brunette and my roots look black but that is probably just 'cause brown next to blonde looks darker. I don't think it is possible to go back to your natural hair color unless you are willing to grow it out or shave it all off and start again. Both options would be totally disgusting IMO and if I wanted to go back to brown I would just die it again.

Actually, to go blond, you bleached your hair. That is the only way that you can "lift or strip" color from hair. When your new hair grows out, you will have "roots" that are your natural color or you will have to maintain your bleaching process every 3 to 4 weeks depending on how fast your hair grows and how comfortable you are with multiple shades of hair.
You may also opt to dye the BLEACHED hair back to your natural color.
